Am looking forward to tomorrows class on my sugar modelling course. Got some very nice, fun ladies attending, it's relaxed, friendly and fun but I still aim to cram as much info into their heads as possible!  
Four weeks, one evening a week, doing mad things with sugar paste, not the fondant type that you cover cakes with but sugar modelling paste, often called Mexican paste. This is basically like fondant/roll out icing but holds a shape much better, is more elastic and dries hard after 3 days plus.

So many students ask me why the models they've tried to make have not held up, held their shape and broken so easily..... this is why, the paste is to soft etc, and really  designed for coating cakes not the best thing for model making.
Modelling paste is fab, I love it and used it to make cake top models and its what I used to make my huge wacky wedding sculptures.
